Photos and voice notes are read in the background. If you have just added a lot at once, the bottom of the chat list shows how many are left. Search covers what you typed, the text inside your photos, and the transcript of your voice notes.
Open ⋯ ▸ Storage and privacy ▸ Transcription language and choose one instead of Automatic, then use “Read everything again” to redo the older notes.
